Want to add a little Saturday night to your sundae? A shot of alcohol will give any ice cream float a lift—and make happy hour much happier.
You can go about boozy affair simply (as I often do) by adding a generous splash of Cointreau to vanilla and strawberry ice cream. Or you can follow the lead of Pavilion executive pastry chef Scott Green and make an extravaganza of a float—replete with candied fruit, toasted nuts, and an array of sinfully delicious elements.
Below are the recipes to four of Green’s best alcoholic ice cream floats. So do right by your weekend guests by making one—or all four—for the weekend. Just make sure to keep these treats away from the young ones.
THE TIKI GOD
Ingredients
Spirits: Jones Cola, Malibu coconut rum
Ice Creams and Sorbets: coconut sorbet, rum raisin ice cream
Garnish: candied pineapple, banana chips, macadamia nuts, toasted coconut, coconut whipped cream
Directions
Scoop ice cream into your favorite sundae glass. Combine chilled cocktail ingredients and stir well. Pour cocktail over ice cream. Add garnish and serve.
THE PINK PUSSYCAT
Ingredients
Spirits: Tanqueray gin, tonic water, grapefruit syrup
Ice Creams and Sorbets: honey ice cream, pineapple sorbet, grapefruit sorbet
Garnish: toasted meringue, fresh pineapple, candied grapefruit
Directions

THE MANHATTAN
Ingredients
Spirits: Jones cherry soda, Maker’s Mark bourbon
Ice Creams: bourbon caramel ice cream, burgundy cherry ice cream, Amarena cherries, toasted almonds
Garnish: cherry Sauce, whipped Cream

THE AVIATOR
Ingredients
Spirits: Beefeater gin, crème de violette, Luxardo Maraschino
Ice Creams and Sorbets: lemon sorbet, violet ice cream
Garnish: candied violet petals, Amarena cherries, candied lemon peel, whipped Cream
